- peel and core your apples and use a cookie-cutter to create apple cylinders, then slice into rings about 7mm thick
- mix the flour, baking powder, salt, sugar and crushed cardamom seeds together in a medium bowl
- in a smaller bowl, combine the milk, yogurt, egg, vanilla extract and zests of lime and orange and combine well
- add the liquid mixture to the dry mixture and beat until smooth
- pour enough vegetable oil in a pan (about 40-50mm deep) and heat until very hot (test with a drop of batter that should sizzle)
- coat 4 apple slices (at a time) with batter and drop them carefully into the heated oil and fry for about 90 seconds on one side and about 60 seconds on the other side until golden brown
- remove fried rings from the oil and drain them on paper towels
- serve warm, sprinkled with icing sugar
