Now here's a perfect solution for a last-minute cocktail event !

Okay, it's mid-week and you're getting home (perhaps a bit earlier than usual) from work and you bump into a few friends and/or neighbors that you haven't had a drink with or chatted with in a while… why not ask them to pass by your place later on to share a bottle of wine and nibble on something together and whip up these little bites with whatever you've got in your fridge. The one key thing you'll absolutely need (if you don't happen to have it already) is the ready-to-roll-out puff-pastry dough. Once you've got it, then you can decide on what you want as a filling… sausage slices, chopped-up cold-cuts and/or veggies, some cheese, some herbs… whatever! Tell your friends to come over while they're still baking in the oven and in less than than three-quarters of an hour, it's all done… serve them up with a few salad spears and "voilà !"… we say that a lot here…

chorizo and parmesan puff pastry bites

ingredients

  • 150 grams spicy chorizo sausage
  • 100 grams parmesan cheese (or other semi-hard salty cheeses)
  • 2 tbsp chopped mixed herbs (coriander and/or parsley)
  • 1 egg yolk
  • 2 sheets (230 grams each) puff pastry
  • 2 tsp olive oil

instructions

figure out how many circles you can get out of your sheet of puff-pastry, this will make the rest easier with little waste at the end, ideally your sausage and cheese slices should not be wider than half of the diameter of the puff-pastry circles.

  • cut up 30 spicy chorizo sausage slices into 5 mm thick pieces, diameter approximately 25mm
  • brush a small frying pan with olive oil
  • fry sausage slices at medium-high heat for about 2 minutes on each side
  • remove pan with sausage slices from heat, drain the fat and let cool
  • slice parmesan cheese in a size approximately equal to the fried sausage slices
  • chop up the mixed herbs such as coriander and/or parsley
  • pre-heat your oven to 200°C with the rack in the middle
  • lay out (or roll out) your chilled pastry dough
  • place waxed paper onto 2 cookie sheets and brush very lightly with olive oil
  • with a round cookie-cutter (about 50mm in diameter), cut out half the puff -pastry circles
  • place half of the puff pastry circles onto the first cookie sheet
  • cut out the other half of the pastry circles
  • place them onto the second cookie sheet and put back inside the refrigerator to keep chilled
  • brush the top-side and edges of the first sheet of puff-pastry circles with egg yolk
  • place one slice of chorizo sausage in the middle of each pastry circle
  • place one slice of cheese onto each chorizo slice
  • add a pinch of fresh chopped herbs (keep some for your garnish) on top of the cheese
  • remove the second batch of puff-pastry circles from the refrigerator
  • place second set of puff-pastry circles over the first prepared ones
  • press down to seal the sides
  • brush the top surface with egg yolk
  • sprinkle the remaining chopped herbs on top of each puff-pastry bite
  • chill everything in the fridge for 30 minutes before baking
  • put into the oven for approximately 20 minutes at 200°C (10 minutes on the middle rack first and 10 minutes on the bottom rack) and rotate the pan half-way through after the first 10 minutes
  • remove from oven when golden and let cool 5 minutes
  • serve warm or reheat for 5-10 minutes at 165°C before serving
