With this heat, comes the urge to take it easy, hang out in the garden and perhaps go to the beach, but has your summer vacation already begun or will you have to wait some more ? Why not pretend you’re already on vacation and make some small fish skewers at home, whether with small sardines or with large anchovies. You can either grill them on a griddle or plancha or even barbecue or oven bake them if you prefer. Just clean them before and let them sit in an herby, citrusy, spicy marinade a few hours before ! An easy and pleasant way to prepare yourself for the holidays ... ;)

50 anchovy skewers

ingredients

  • 750 grams fresh anchovies
  • 1-2 lemons
  • 1 lime
  • 2 tbsp sea salt
  • 1 branch fresh bay leaves
  • 1 branch fresh rosemary
  • 1-2 tbsp pickling spices (mix of coriander, mustard, fenugreek, black pepper, chili, cinnamon, fennel, cloves, allspice)

instructions

  • mix the juice of 1 lemon and the juice of 1 lime and put aside
  • clean your anchovies by making an incision behind the gills and head and gently pull out the entrails
  • thread the cleaned anchovies onto the skewers
  • in a shallow container, make a bed of some fresh bay leaves and rosemary and place anchovy skewers on top
  • sprinkle some sea salt and pickling spices on the anchovy skewers
  • add more bay leaves and rosemary on top of the first row and add another row of anchovy skewers on top and sprinkle with sea salt and pickling spices and add more bay leaves and rosemary
  • continue until all anchovy skewers are arranged and then pour lemon and lime juice on top and close your container and let marinade in the refrigerator for at least 2 hours (but not overnight because it will soften the anchovies too much)
  • when ready, heat your grill (or plancha) to high and brush with some olive oil
  • grill anchovy skewers 2-3 minutes on each side and serve
  • * if you are using your oven or a barbecue instead, brush the anchovy skewers with some olive oil and bake in the oven for 5-7 minutes at 200°C or barbecue quickly for 2 minutes on each side !
