In the beginning, there were grapessquished, squashed, mashed, pressed, juiced, fermented, transformed, becoming something else : WINE (of course it’s more complicated than that but you get the picture). The colours are 3 : red, white, rosé, (the easiest descriptive terms to remember). Then came all those characteristics used to describe them : aroma, bouquet, body, dry, sweet, semi-sweet, intense, fruity, spicy, herby, flowery, earthy, crisp, soft, smooth, mild, strong, tannic, acidic, oaky (and some more, but these are good words to remember when having a chat) … Going full circle ! The grapes went back to the wine, marinating in (for several days) and silently and slowly absorbing the essences of their ancestors, heightening and transforming and intensifying their flavours, becoming something else than just grapes & wine & aromatics, becoming something more matured and developed yet equally new : ICY FROZEN WINE-MARINATED GRAPES ! ;) 

icy wine-marinated grapes

3 cups (450 grams)

ingredients

  • 1 cup green grapes (150 grams)
  • 1/2 cup white wine (125 ml)
  • 2 tbsp white granulated sugar
  • 1-2 tbsp granulated sugar (for coating)
  • flavourings : 1 star anise, 3 cardamom pods, 1 lime peel (or zest)
  • 1 cup black grapes (150 grams)
  • 1/2 cup red wine (125 ml)
  • 2 tbsp muscovado (or dark brown) sugar
  • 1-2 tbsp white granulated sugar (for coating)
  • flavourings : 1 cinnamon stick, 3 allspice peppercorns, 2 cloves, 3 mahlepi seeds
  • 1 cup pink grapes (150 grams)
  • 1/2 cup rosé wine (125 ml)
  • 2 tbsp brown or blond sugar
  • 1-2 tbsp white granulated sugar (for coating)
  • flavourings : 1 large orange peel, 1 large lemon peel (or zests)

instructions

*note : many choices and types of sugars and spices and flavorings are possible, simply stick to the proportions of sugar and wine and grapes and the rest is up to you ...

  • wash and dry your grapes
  • combine wine and sugar and flavorings (whole or slightly crushed) in a small pot and heat until sugar dissolves and simmer for 1 minute and let cool slightly
  • pour warm wine mixture (with flavorings) over the grapes, let cool and then store in the refrigerator (covered) for 24-48 hours
  • remove the marinated grapes from the refrigerator, pour out liquid, drain and slightly pat dry the grapes and toss with regular granulated sugar
  • place in the freezer overnight until frozen and re-toss with extra granulated sugar (if necessary) before serving frozen.
