- heat your oil in a deep casserole until very hot
- in a large bowl, toss together your grated parmesan, dried herbs, spices, salt and pepper
- gently drop small batches of the semi-dry hollow pasta into the hot oil and fry until bubbly and golden
- remove and while still hot, quickly toss with the grated parmesan and herbs and spices mix and continue frying and immediately tossing with the cheese-spix mix until all the pasta is used up
- let cool down and further dry out and serve
